These are just some suggestions. You can build your own menu if you’d like.
All menus can be changed or modified to your preference.

“ALL MEATS ARE COOKED MEMPHIS STYLE”

  1.  Whole Pig – Whole Pig carved on site and served with 3 side dishes of your choice and cornbread.
  2. Smoked Pork / Chicken Combo (Pork and Bone in Chicken) – Our Lightly Smoked Pork and Smoked Chicken served with your choice of 3 side dishes and rolls and butter.
  3. Smoked Pulled Pork Sandwich – Our Shredded, Smoked and Seasoned Pork Sandwich served with your choice of 2 side dishes.
  4. Chicken Breast (1 Boneless) – Our Smoked and Seasoned Chicken served with your choice of 2 side dishes and rolls and butter.
  5. Smoked Beef Brisket Sandwich – Our Shredded and Lightly Smoked Brisket Sandwich served with your choice of 2 side dishes.
  6. Chicken Leg ¼ – Chicken Leg ¼ lightly seasoned and smoked, served with your choice of 2 side dishes and rolls and butter.
  7. Smoked Ribs (4 Bones) – Our Ribs Smoked and Seasoned then cut into a 1/3 of a slab and dipped in our own National Award-Winning BBQ sauce. Comes with your choice of 2 sides and
    cornbread.
  8. Stuffed Pork Chop- Boneless Pork Loin stuffed with traditional stuffing and smoked to perfection. Served with 2 sides of your choice and Corn Bread
  9. Lasagna (Meat or Vegetarian) – House-made Lasagna served with our made in house Garlic Bread and a fresh Tossed Salad.

Food Truck Menu

You can ADD another Meat or Side dish to any sample menu at an additional cost.
 

MEATS/MAIN DISHES: 

  • Whole Pig or ½ Pig
  • Prime Rib- Seasoned then smoked and cut on site.
  • Pulled Pork– Our smoked Whole Pork Butt then shredded with sauce on the side.
  • Whole Pork Butt- Seasoned then lightly smoked.
  • Ribs– Whole Slab of Ribs seasoned and smoked. (Can be cut into smaller pieces).
  • Stuffed Pork Chops- Boneless Loin stuffed then smoked.
  • Rib Tips– Smoked and cut into chunks then bathed in sauce and sold by the pound.
  • Beef Brisket– Shredded with sauce on the side.
  • Steaks- Many cuts available just ask.
  • Memphis Style Chicken– Cut up into 8 pieces, Whole, ½’s or ¼’s.
  • Jumbo Chicken Wings– Order in increments of 30.
  • Smoked Chicken Leg ¼’s– Lightly smoked and seasoned.
  • Pulled Chicken– Shredded with sauce on side.
  • Smoked Sausage Bites– Double Smoked Sausage cut into bite size pieces.
  • Lasagna – Meat or Vegetarian.

Meats above are lightly smoked and dry rubbed. We always cook Memphis Style.
We do not add sauce to the meat unless specified above. We do provide sauce by the bottle for products above.

SIDE DISHES: 

  • Baked Beans – Our beans are sweet and thick with our pork in them.
  • Broccoli Salad – (SEASONAL Item Available June 1 st -September 1 st ) Broccoli, carrots and bacon in cream sauce
  • Corn – Corn with butter
  • Cheesy Hash Browns – Shredded Potato in a cheese bake sauce.
  • Cucumber Onion Salad- Sliced Cucumbers and Sliced Onions in a Tangy Vinegar Sauce.
  • Cole Slaw – Shredded cabbage with carrots in a cream sauce.
  • Fresh Fruit Salad (SEASONAL Item Available June 1 st -September 1 st ) Mixed fresh fruit cut into bite size pieces.
  • Garlic Potatoes– Cut up Potatoes with butter and garlic.
  • Green Beans – Green beans with onions and butter.
  • Green Bean Casserole – Green bean casserole says it all.
  • Ranch Green Beans- Our delectable Green Beans tossed with Ranch to make a midwestern delight.
  • Hot Mixed Vegetables – Green beans and baby carrots mixed with butter and spices.
  • Loaded Mashed Potatoes – Mashed Potatoes with all the fixings.
  • Mashed Potatoes & Gravy – Mashed Potatoes with gravy on the side.
  • Mac and Cheese – Cavatappi Pasta in a rich cheese sauce.
  • Mac and Cheese with Bacon – Cavatappi Pasta in a rich cheese sauce and apple wood smoked bacon.
  • Mac Salad- Al dente macaroni noodles in a creamy sauce with vegetables added in to bring it all together.
  • Pasta Salad – Rotini pasta with fresh veggies in an Italian Dressing.
  • Potato Salad – A mustard and mayonnaise combination potato salad with fresh veggies added.
  • Sweet Potato Casserole- Sweet Potatoes mashed with butter, brown sugar and other fixings to make this exactly what it sounds like.
  • Tossed Green Salad – (SEASONAL Item Available June 1 st -September 1 st ) Lettuce with a mix of fresh veggies with tomatoes added on top.

APPETIZERS:

  • Cheese and Cracker Tray – Cheese cubes with crackers
  • Cheese, Sausage and Cracker Tray – Cubed cheese with sliced smoked sausage and crackers
  • House-made Corn Dip with Chips Corn in cheese sauce with a kick and nacho chips
  • Jumbo Chicken Wings- 30 wings w/BBQ sauce
  • Meatballs – Meatballs in our BBQ sauce
  • Rib Tips: Tips that are smoked and put in sauce.
  • Sausage Bites: Sausage that is smoked and cut into bite size pieces
  • Veggies and Dip: (SEASONAL Item June 1st thru September 1st) A mix of fresh Vegetables with Ranch for Dipping.

DESSERTS: 

  • Fruit Cobblers – Cobblers with fruit on the bottom with a sweet topping
  • Cookies – Chocolate Chip, Peanut Butter, Oatmeal Raisin.
  • Brownies – Brownie without nuts or frosting.
  • Banana Pudding – Pudding with fresh bananas and wafers.

BREADS: 

  • Potato Rolls – soft roll potato style
  • Corn Bread – sweet corn bread
  • Buns – Hamburger

PLATES – FLATWARE: 

  • Foam Plates – Foam plates and flatware
  • Plastic Plates – HIGHER grade plates and nicer flatware and napkins for special events
